This is the simplest of vegetable side dishes where you simply fry slices of courgettes until caramelised and serve a little crumbled feta over. It is best served warm.
Working in 2-3 batches (so you do not over-crowd your non-stick pan), heat some fat of your choice over high heat. Place the sliced courgette pieces (cut approx. 1cm thick) flat-side down and flip each one once they start turning golden. I like to use BBQ tongs to do this.
Place them on a large plate or tray lined with kitchen paper. Repeat the process with the remaining fat until all the courgettes are done.
Season with salt and serve warm with the feta crumbled over. Generously crack over freshly ground black pepper. If you want, you could stir through some wild rocket too (excl. in the macros).
