Have all your ingredients ready. I have shown my FAVOURITE, easy-drinking red wine here, but you will recognise it easily because it is available in all UK stores.
Add all the ingredients to a medium pan. *FOR THE LEMON, peel the lemon using a small, sharp paring knife, then scrape off as much of the white pith area from the peelings. I find the pith far too bitter. Alternatively, you could simply use a vegetable peeler to peel the lemon. Add the peelings to the pan. and squeeze in the lemon juice (catch the pips!).
Bring the mixture to a light simmer for approx. 20-22 minutes.
Strain the mixture (discarding the contents of the sieve) and serve warm. You may want to add fresh lemon slices or cinnamon sticks to garnish - but this is optional. Enjoy!
