Bacon, Prawn and Avocado Kebabs (Low-carb)
Bacon, prawn and avocado kebabs to snack on at a BBQ to replace the crisps and carb-laden snacks. This recipe makes 20 mini skewers and the macros (2.9g carbs per serving) are calculated as 1 serving being 2 skewers.
Servings 20 mini skewers
- squeeze fresh lemon
- 1 large avocado
- 40 raw King prawns peeled
- 10 rashers smoked bacon halved
- 5 TB olive oil
- 3 TB tamari (gluten-free soy sauce)
- 2 cloves garlic peeled and crushed
- 2 limes halved to serve
- pink Himalayan salt
Squeeze a lemon over your chopped avocado, then wrap each avocado cube with a half rasher of bacon. Skewer a prawn onto a mini kebab stick, followed by the bacon-wrapped avocado, and then a second prawn.
In a small bowl, whisk together the olive oil, tamari and crushed garlic. Use a silicon pastry brush to baste the kebabs with the marinade and grill over the braai (BBQ) until the bacon has cooked sufficiently.
Serve immediately with halved limes to generously squeeze over. Season with a little pink Himalayan salt.
