Good ol’ chicken! Who doesn’t love it? (And even more so on keto where you can enjoy that crispy, heavenly skin completely guilt-free!) Here, I took the humble drumstick up a notch and cooked them with toasted sesame oil and sesame seeds – before drizzling a little more sesame oil over and garnishing with fresh chili and coriander (< that’s ‘cilantro’ for my US readers). Toasted sesame oil delivers MASSIVE flavour and I love it! (NOTE: I used 8 large drumsticks in this recipe and assumed each person’s portion would be two drumsticks each. This is how the macros were calculated.)

Sesame Chicken (Low carb)
- Preheat the oven to 200°C (fan oven). This is 220°C for conventional ovens (or 425°F / gas mark 7).
- Spread the chicken drumsticks on a lined, greased baking tray and season with salt. Use a pastry brush to brush over (the first reference to) sesame oil.
- Generously scatter over the sesame seeds, rolling the drumsticks in them until coated all over.
- Place in the preheated oven for 25-30 minutes until the chicken has sufficiently cooked through.
- To serve, drizzle over the (second reference to) sesame oil and scatter over the sliced red chili and chopped coriander. Season further with salt, if needed.
