Cinnamon French Toast (Keto)

Breakfast in 10 minutes? Yes please! Deliciously thick, chunky and very satisyfing French Toast slices made using a cinnamon version of my soft microwave bread. Because its soaked in egg after cooking, I sliced three thicker slices instead of four). The macros are calculated per slice and I have excluded any toppings, as I assume some people prefer a savoury French Toast (like I do!) If you choose this option, simply omit the cinnamon from the recipe. You will need to invest in an inexpensive, small, square microwave-friendly Tupperware for this recipe. Mine was approx. 11 x 11cm / 4.3 x 4.3-in, but its important that it’s deep as the mixture rises and you don’t want it to cook over. I sourced a suitable alternative for you on Amazon, which is deeper than you might need, but will do the job just perfectly. For those doing Dirty Keto, I discovered an amazing sugar-free syrup, which tastes and behaves exactly like the real thing! I have not included them in the macros below (even though they come in very low in carbs), but I encourage you to check it out. It’s called Sukrin Golden Syrup, High Fiber Sugar Alternative and I will be playing around with it a lot more in the future.

Delicious and satisfying French Toast that can be altered from a sweet cinnamon version to a lovely savoury version. Each thick slice comes in at only 2.7g carbs per serving.

Instructions
  1. Whisk the eggs and olive oil in a bowl. In a separate bowl, combine the remaining dry ingredients, ensuring the mixture has thoroughly combined. Grease a small, square microwave-friendly Tupperware – similar square dimensions to a slice of bread, approx. 11 x 11cm / 4.3 x 4.3-in. (Amazon link at the end of the recipe).
  2. Add the whisked egg mixture to the dry mix and combine very well. Pour the mixture into the prepared Tupperware.
  3. Place into the microwave on high for 1 minute 45 seconds, then remove. Turn the Tupperware out upside down and give it a little knock – it will tip out as a solid mass. If it doesn't, slide a knife around the edges. Once cool enough to handle, turn it on its side and slice into 3 thick slices.
  4. To finish the French toast, whisk the eggs well and add in the double cream and cinnamon, whisking well to combine.
  5. Heat a little light olive oil - or butter - (working in batches, one slice at a time) in a non-stick pan. Submerge the slices of bread into the egg mixture and allow to soak for a few seconds. Remove and allow the excess to drip off.
  6. Fry the egg-soaked bread over a moderate heat, pressing the bread down with an egg-lifter to ensure the egg has cooked sufficiently, flipping until browned on both sides. Remove and set aside, repeating the process until all three slices are done.
  7. The SUKRIN sugar alternative syrup has not been included in macros as I assume many readers prefer a savoury French Toast (like me!). If you choose to enjoy this French Toast savoury, simply omit the cinnamon and enjoy it with some reduced-sugar ketchup instead. (I feature a homemade tomato sauce on this site too.
