Best-ever Roasted Macadamia Nuts (Keto)

Just look at those macros – these are the ULTIMATE fat snacks! Macadamias are my favourite nut: they are high in fat and mind-blowingly rich in flavour when roasted. If you can spend 15 minutes once or twice a week to prepare a batch of these, you will have plenty of servings of these super-tasty, satisfying fat snacks. After roasting them, I scattered over a pinch of salt and Swerve® as soon as they came out of the oven, then allowed them to cool completely before storing in a sealed container. The macros are calculated on a portion size of 35g / 1.2oz roasted macadamia nuts – which is ample for a quick snack to get those fat macros higher, or satisfy your desire to crunch on something delicious between meals. They smell like popcorn and taste like heaven!

This is a FABULOUS Keto Creamed Spinach recipe – perfect when served with a juicy ribeye nestled alongside it. It serves two people, so double up the ingredients to feed the family (although we all know that a mountain of fresh spinach will wilt down to nothing, but luckily it happens pretty quickly, so simply add the spinach to the pan in two or three batches at a time.) I gently caramelised shallots and garlic for added flavour beforehand and added the raw spinach to the pan – again, cooking slowly and over a low heat with no added moisture (please don’t boil your spinach!). It takes some patience and constant stirring, but the results are crazy-amazing…

Beurre Noisette (Brown Butter)

Let’s take butter up a notch in flavour! Try this recipe at least once – I promise you will not regret it. Deep, rich, nutty flavours that remind me of caramel, a block or two of browned butter can be used to cook eggs, add to your baking, or melt and pour over cooked vegetables, like I did on my Brown-buttered Brussels Sprouts. And more good news: since you are essentially removing the milk solids from the butter (when you strain it through the muslin / cheesecloth), so this browned butter is even lower in carbs than regular butter (in fact, its zero carbs). If you love it (and I know you will), make a larger batch next time.

Keto Celeriac Dauphinoise

I grew up in South Africa and a mandatory ‘potato bake’ was the highlight of any braai – especially in my family where my aunt would get frequent requests to bring one along to family gatherings. It is a wonderful memory and one that deserved mention here. After moving to the UK in 2012, I used to make my own version, which was more of a classic Dauphinoise. After going keto in early 2018, not being able to tuck into one was the only thing that stung a little – until I discovered how low in carbs celeriac was! Backpacking around Vietnam with Funnyman in 2010 was one of our best holidays ever! I recall having pho bo (pronounced “fuh” – not “foo” or “foh”) for the first time in Hanoi – and I was blown away! I happily slurped it down numerous times as we travelled from north-to-south over those 3 weeks! Now, many years later and hardcore into my low-carb lifestyle, I wanted to relive those awesome memories. I created a quick 15-minute low carb pho bo using the (konjac / shirataki) ‘noodles‘ from the UK company Eat Water’s range to make it low-carb friendly. I LOVE THIS.

Fragrant, spicy, creamy… this low-carb Thai prawn curry was made using Thai yellow curry paste and coconut milk. I struggle to find Thai yellow curry paste in the stores here in the UK, so I buy it online. It’s authentic, delicious and affordable. I quickly cooked the prawns before starting the curry (and then added them back in to warm through before serving) – this prevents an unsightly grey soup and delays the sauce reducing (I learnt this from experience). The sauce is reduced until thick and creamy and then simply poured over konjac pasta. The plump prawns, sweet cherry tomatoes, salty fish sauce, spicy chilies, acidic lime and the fragrant coriander create perfect harmony. I also added a teaspoon of sweetener to finish it off with some much-needed sweetness. Simply put – you need to eat this!
